The Oven

Reaching 700 degrees, the mobile wood-fired oven is the secret to authentic Neapolitan style pizza. Its wood-smoked flavors and super heat crisp the thin crust for an excellent texture and taste.

The Dough

Three days before the pizza slides into the wood fired oven, the homemade dough begins the pre-ferment process. That's when the yeast takes hold and gives the dough its characteristic flavor. It is a combination of Italian and domestic flours. The dough gives the pizza an amazing chewy and crisp crust - the foundation of a great pie.

The Sauce

Terrance tried and tasted many sauces. The winner is a combination of tomato and basil, with roasted garlic, a Neapolitan tomato sauce that is simple and perfect.

The Toppings

The vegetables are fresh and bought whenever possible from the farmer's market or grown in an extensive heirloom, kitchen garden. So the toppings are fresh, local and seasonal.

Smoked Chicken Special
Start by choosing red or white sauce, then topped with in-house smoked chicken, caramelized onions, pesto drizzle, a blend of fresh mozzarella and fontina cheeses. After baking, top with your choice of spinach or garden arugula.

The Classic
Red sauce, pepperoni, sausage and mushrooms with fresh mozzarella and provolone cheeses.

Sausage Pizza
Red sauce topped with Italian sausage and fresh mozzarella cheese.

Pepperoni Pizza
Red sauce topped with pepperoni and fresh mozzarella cheese.

Spicy Pepperoni
Red sauce topped with pepperoni, pepperancini peppers and fresh mozzarella and provolone cheeses.

Wild Mushroom Special
White sauce with fresh mozzarella cheese, sauteed leeks, roasted cremini, shitake and oyster mushrooms. Finished with caramelized onions.

Margherita Pizza
Neapolitan style crust topped with red sauce, fresh mozzarella and fresh garden basil. Named after Queen Margherita, this pizza has all the colors of the Italian flag.

Cheese Pizza
Red sauce topped with provolone and fresh mozzarella cheese.

Summertime Pizza
Red sauce, hand picked cherry tomatoes, mozzarella cheese and topped with fresh basil.

The Veggie Special
Red sauce with roasted eggplant, peppers, onions, zucchini and asparagus, drizzled with pesto and topped with mozzarella and provolone cheese.
